Tomato & herb couscous [Recipe]

This is a super simple recipe by Paul Rankin, which my youngest loves (made without salt for her) and makes a good side dish.

Less than 30 mins prep time
Less than 10 mins cooking time
Serves 2

INGREDIENTS
250g/9oz couscous
150ml/¼ pint hot vegetable stock
2 tbsp olive oil
2 tomatoes, seeds removed and chopped
1 lemon, juice only
2 tbsp chopped fresh flat-leaf parsley
Salt & pepper

METHOD
1. Place the couscous into a heat proof bowl, pour over the hot stock and olive oil and cover with cling film. Leave to stand for five minutes.

2. Add the tomatoes, lemon juice and parsley to the couscous. Season, to taste, with salt and pepper and stir well.

3. Serve!
