INGREDIENTS
250 g / 12.5 oz butter, softened
140 g / 7 oz caster sugar
1 egg yolk
2 tsp vanilla extract
300 g / 15 oz plain flour
METHOD
Mix the butter and sugar together in a large bowl until soft and fluffy.
Add the egg yolk and vanilla and beat until fully combined.
Soft over the flour and stir/knead to combine.
Roll out the dough on a prepared surface and cut out desired biscuit shapes
Place the shapes on lined baking sheets and bake in a preheated oven on 190c for approx 10-15 minutes (you may need to adjust for your own oven)
Remove from the oven and cool on a wire rack
