Cumin Roasted Sweet Potatoes #Recipe
I was looking for something to have for my dinner last night (my meal plans are primarily for my family and I eat separately at the moment, unless the main meal is easily modified to suit me too which it usually is), and after spotting her amazing before & after pictures in my Facebook friends news feed, I remembered that my dear friend Tara from The Foodie & The Family is following a Paleo lifestyle and loves to cook as much as I do = recipes!
She has amazing recipes on her blog, good real healthy food, no gimmicks, no 'spin'. Just food. And Tara is fantastic too, I have known her since February 2001 when we had our sons and met via an online forum, she is as nuts as me for having five kids, you need to go check out her other blog too, Forgive My Life.
On to the recipe!
Last night I chosen to make Tara's cumin roasted sweet potatoes to have with my dinner, and they. were. divine. The recipe is so quick and simple but delicious and filling.
4 large sweet potatoes
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons ground cumin
Preheat oven to 220c/425f
Cut sweet potatoes in to 1/2" cubes and lay on a baking sheet in a single layer. Pour olive oil over potatoes and toss to coat. Sprinkle evenly with salt, pepper and cumin. Toss to coat.
Bake in a preheated oven for 30-35 minutes, flipping halfway, until the sweet potatoes are tender inside. Serve, and enjoy!
