Mustard Chicken

I'm always on the look out for new recipes to try, to keep our meals interesting. We do end up sticking to a few firm family favourites (Brinner in particular always works well on busy evenings) but occasionally we will give something new a try and luckily, it tends to work out all right. When it doesn't, well... The chippy is only down town.

I stumbled across this Mustard Chicken recipe on the Slimming World website so I can take no credit for it, however I will share it with you here so you can give it a try for yourself if you are so inclined. It is simply delicious, and the mustard is not at all overpowering.

I modified this recipe when I used it to suit our personal family requirements, this recipe will feed one. It is very simple to adjust for your own needs for more people. We enjoyed our chicken with swede mash and broccoli, but you can choose your own family favourites to accompany it.

One boneless skinless chicken breast
1 tbsp natural fat free fromage frais
1 tsp freshly chopped chives
1 level tsp wholegrain mustard
Salt & pepper
  • Preheat the grill to a medium/hot setting.
  • Wash and pat dry the chicken breast and place in a foil lined grill tray.
  • Mix the fromage frais with the chives, mustard and seasoning.
  • Brush half of the mixture over the top of your prepared chicken breast.
  • Place under the grill and cook for 15 minutes.
  • Turn the chicken, and brush with the remaining mixture and cook for a further 12-15 minutes until cooked through.
Serve and enjoy!
