Fruit of course doesn't last forever and while we are a family of fruit lovers, I could see that we weren't going to get through it all before it went bad... So, I used my initiative and whipped up some after-school treats for the kids.
INGREDIENTS
10 oz fruit of your choice - we used pineapple, blueberries, strawberries & raspberries
100ml fruit juice of your choice - we used apple
200g greek yoghurt - we used TOTAL
METHOD
Blend all of your ingredients all up together in a jug, and then simply pour it into your ice lolly mould before putting in the freezer for at least four hours, or overnight. I also used my miniature jelly moulds to make extra little portions to go in with the boys' packed lunches, and a larger one for A to take to school (as by lunchtime they should have defrosted enough for them to eat with a spoon!). If you feel the need, you can also sweeten them a little with a tsp of honey or agave nectar.
Quick, easy and a delicious & refreshing treat for a sunny Spring afternoon - and no unnecessary waste!
Great idea . I have a big problem during the summer which is, I love icecream. Every now and then is ok but during the summer I could have it every day, all day. I think I might just make myself some frozen yogurt lollies, they might help keeping me away from tue the icecream van xx
