lemon brownies (lemonies)
Someone posted this 'Lemony Lemon Brownies' recipe on Facebook a few weeks ago, and I simply had to pin it to make at a later date.

My kids are huge fans of lemon flavoured, well, anything! so I knew that these would go down very well indeed. The brownies lasted all of about an hour before they were all polished off, & we decided to call ours 'lemonies'!

This is the original recipe from bestyummyrecipes.com, I've simply included conversions for ease. I take no credit for this recipe whatsoever, I just wanted to share it here because it is so delicious!

INGREDIENTS

{for the brownies}
3/4 cup (6oz) all-purpose (plain) flour
3/4 cup (6oz) granulated sugar
1/2 cup or 1 stick (4oz) unsalted butter, softened
2 large eggs
1/4 tsp sea salt
2 tbsp lemon zest
2 tbsp lemon juice

{for the glaze}
4 tbsp lemon juice
8 tsp lemon zest
1 cup (8oz) icing sugar

METHOD
  1. Preheat the oven to 180c/350f/Gas Mark 4 and grease a brownie pan (ours was 7x11 inch).
  2. Zest and juice two lemons and put them to one side.
  3. Combine the flour, sugar, salt, and butter.
  4. In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until combined.
  5. Pour it into the flour mixture and beat until smooth and creamy.
  6. Pour the mixture into the brownie pan and bake for 23-25 mins, they should turn golden around the edges. Take care not to overbake or it will dry out the brownies.
  7. Allow to cool completely before glazing.
  8. Sieve the icing sugar & whisk with lemon zest and juice.
  9. Spread the glaze over the brownies and allow to set.
  10. Cut into even squares, and enjoy.

  7. That looks delicious! My kids don't like lemon, so my husband and I would have to polish off the lot without them! (In a parallel universe where I was able to cook, of course!)
