What's sweet, YELLOW, and loved by everyone?
It's important to me to encourage the children to eat their vegetables, but it's not always easy. Some of my children have been brilliant at eating, others - not so much... And we also have the extra challenge of L's sensory issues with food so I am always keen to come up with new recipes to encourage them to give different combinations of flavours & textures a try, and interesting ways of presenting food to make it more appealing.
1 tbsp Green Giant Sweetcorn
1 Carrot (grated)
1 Small Onion (grated)
1 tbsp Flour (I used coconut flour)
1 tsp Cooking Oil (I used coconut oil)
Pinch of Pepper
- Combine all of the ingredients in a bowl and mix well.
- Heat a frying pan with a little oil, and then spoon half of the mixture into the middle of the pan and shape into a round, flat fritter.
- Press down with a spatula and cook evenly for approx 15 minutes, turning the fritter over carefully half way through cooking.
After we had cooked our fritter, we decorated it with some red onion, cucumber, and Green Giant sweetcorn to turn it into our very own Minion Fritter - and delicious it was, too! Fritters are great for a quick and easy light Summertime lunch, perfect served with a salad to enable the kids to create their own versions of Bob, Stuart and Kevin!
